I have always been a healthy conscious eater but even more vigilant since my PCOS diagnosis. Food can be the either a valiant soldier or a betraying Snowden to your body. I think that most people would agree with me that they would rather have a body healer than a body leaker. Right? Well, salmon is right on that list. This Sage Balsamic Glazed Salmon is waiting to heal you up.
High in the D + B vitamins and minerals like magnesium, this fish is known for its ability to help level out hormones. Which is what makes PCOS such a complex ailment to battle. Everything we do influences out hormones from how much we sleep to what and when we eat to what we use as our cleaners in the house.
Honestly though it’s enough to make one go batty!
So we take it easy and start with food. It’s the one thing we can control and utilize at least 3 times a day.
And if you are looking for a quick meal to get dinner on the table in 15 minutes Sage Balsamic Glazed Salmon is for you! Served along side sautéed veggies and cauliflower rice you have a quick and healthy dish! And I’m a sucker for garlic but if you are less of a fan of it (or a vampire) just leave it out.
I love all things salmon… even raw salmon sashimi if the occasion and location are right. Like if I’m by the Pacific Ocean in Seattle or Vancouver. That’s the only time I’ll eat anything raw. And usually its just one bite. The texture just doesn’t sit well with me and knowing that food borne pathogens are running a muck out there in raw foods. No thank you. But cooked, yeah I’ll do cooked anything!

2 oz fillets

- 8 oz salmon divided into 4 2oz fillets
- 1 Tbsp olive oil
- 1/2 cup balsamic vinegar
- 1 Tbsp Dijon mustard
- 2 Sage Leaves
- 1 clove garlic minced
Ingredients

- Preheat oven to 400F. Season salmon with salt and pepper and back for 15 minutes.
- While Salmon is roasting prepare the sage balsamic glaze. Heat oil over medium low heat and saute garlic for 1 minute. Add dijon mustard, balsamic and sage leaves and stir until combined. Bring balsamic mixture to a simmer occasionally stirring. Allow liquid to reduce to half, about 5-8 minutes. (See note)
- Drizzle balsamic glaze over the cooked salmon and enjoy with a side of sautéed vegetables and cauliflower rice.
To determine the glaze has set you will do the spoon test!! Take the back of a spoon and dip it in the balsamic glaze. Run your finger down the back of the spoon and if the line doesn't fill in with liquid its ready! Just be careful not to burn your finger.
