I have to constantly remind myself that the warm weather is coming. Winter has been nothing less than brutal here in the Inland Northwest. Cold and gloomy weather lingering longer than welcomed. Its almost May as still in the 30’s! But May brings probably one of my favorite reasons for tacos and mojitos… Cinco de Mayo! So this sugar free Skinny Girl Mojito should 100% be on your menu for the celebration.
I don’t have a lick of Latina heritage in my blood, aside from living on the boarder of Mexico for a year, but I find that the relationship between food and celebrations needs to be recognized. Cinco de Mayo is in fact not Mexico’s Independence Day (that’s celebrated on September 16th <— another day for tacos and libations!), but is a celebration of the Mexican Army’s unlikely victory over the French. So sorry France, today we celebrate Mexico and their contributions of tacos and warm sandy beaches! Two years ago May 5th fell on a Tuesday… and in our house Tuesday means Tacos! So I hosted a neighborhood Cinco de Mayo party where about 20 friends came over for tacos, margaritas and mojitos.
I know, I know… Mojitos are Cuban but they remind me of hanging out on a warm beach with sand between my toes and tacos. So please forgive my ignorance about the origin of mojitos and enjoy this low cal libation any on which ever day you like!
This Skinny Girl Mojito has everything you could want in it except the sugar! Using the natural tartness of the limes and essential oils massaged out of the mint leaves you get all the flavor you need there. Since la Croix is sold just about everywhere these days it is the bubbly in this refreshing drink. It is recommended that women with PCOS and trying to become pregnant stay away from alcohol so I usually don’t drink. But some occasions call for it and when they do I go skinny! Staying far away from sugar since it can cause metabolic dysfunction. Not to mention I can’t stand going to the dentist (sorry dad).
I have to be honest in saying that this may be the only boozy drink recipe you’ll see up here for a while. Which is 100% fitting to who I am as a person. If I drink anything its like a glass of red wine or a fancy cocktail on a date and that’s about it. The Blog Me would like to know mixed drinks and crafted cocktails inside and out and pat myself on the back for being halfway through sommelier training. Or something like that. I don’t even know what I’m really talking about.
But the Real Me is the one one who’s making pitchers of margaritas and mojitos in my yoga pants (that’s generous – let’s call them for what they really are, sweats) and brings them over to Neighbor Night and makes them for occasional friends-are-coming-over weekend shindig. That’s about as drink-y as things get around here. And I’m okay with that. Lucky for anyone who might show up on cinco de Mayo, the Real Me is showing up with a pitcher of tasty sugar free Skinny Girl Mojitos and margaritas!
If you’re making these and you want real lime juice (TRUST ME YOU DO) please get yourselves a juicer. I was walking through Goodwill one day and discovered a nifty citrus press, which is perfect for anything less than a pitcher of juice! However if you are going to make this in mass quantities you will 100% be grateful you spent $20 on a citrus juicer! Order it on Amazon if you are living the good life with that amazing thing as two-day Amazon prime or pick one up at Target when you go out to get your limes today. SO worth it friends! Feel free to Pin the heck out of this recipe… You’ll want this for later for sure.

- Crushed ice
- 4 mint leaves + extra for garnish
- 1/2 can Lime La Croix
- 1 fresh lime juiced & extra for garnish
- 1 oz white rum
Ingredients

Place the 4 mint leaves in a cup and massage with a spoon to extract the flavor. Add crushed ice, 1/2 can of lime La Croix and splash in that shot of rum (or a double if you'd like... no judgement here). Juice the lime into the cup and stir. Garnish with circular lime wedge and extra mint. Enjoy!
